Sugar beet, scientifically known as Beta vulgaris, is a plant renowned for its high sucrose content, cultivated primarily for sugar production. It shares botanical lineage with other B. vulgaris varieties like beetroot and chard.

Comprised of approximately 75% water, 20% sugar, and 5% cell walls, sugar beets yield sugar beet fibre after sugar extraction from the root. This dietary fibre source is notable for its soluble and insoluble fibre content, primarily insoluble hemicellulose (22-32%) and soluble pectin (22-29%), with smaller amounts of cellulose and lignin. Remarkably, it possesses a water-holding capacity of 3-4 times its weight.

In comparison to conventional dietary fibre sources like cereal products and fruits, sugar beet fibre presents several advantages:

1. Higher dietary fibre content, with an ideal 2/3 balance of insoluble fibre.
2. Absence of phytic acid, which may hinder mineral absorption, making it suitable for maintaining mineral balance.
3. Naturally gluten-free, rendering it safe for individuals with gluten intolerance.

Sugar beet fibre contributes to increased faecal bulk (colon cleansing) via two mechanisms:
